I am not covering daedra worship if your character is a good person, but you can consider Meridia if your character ends up being a fanatic against undead, but know that when you die you are going to be a brainless puppet in the hands of the daedric prince. Still you can consider Shor, go through the companions quest line and believe Sovngard has doors open for a Dunmer. Mara god of love is the best Nordic choice for a noble paladin that helps everyone, and Stendarr can be the best for vampire hunters, daedra hunters and for a character who fights in the name of justice and honor. Kyne is the best one for a character who loves nature, hunting and exploring, she is god of warriors too.

In terms of religion it can be weird to have Talos or Shor as a god to worship, but for a true Nord there are more options like Kyne, Mara or Steandarr. Still depends of what kind of character you want to create, the begining can be a Dunmer with a Nordic culture background, if the character was raised in Windhelm probably is used to be hated by other Nords and probably knows how to fight, Nords as a society, don't like magic and there aren't too many options in Windhelm for your character to actually be a mage, I would go for a Melee or combat archer.
